Under simplified in vitro gut-like conditions, the presence of physiological bile salts significantly promoted whole-cell-mediated bioconversion of sucrose into inulins, yielding approximately 6.2 g/L after 24 h.
Abstract
In this study, Lactiplantibacillus plantarum HK9 was identified as a probiotic strain capable of synthesizing exopolysaccharides from sucrose, with 13C NMR confirming these exopolysaccharides to be inulins characterized by β-(2 → 1)-glycosidic linkages. Although inulosucrase exhibited maximal activity at low temperature and acidic pH, fermentation at physiological temperature (37 °C) revealed enhanced inulin accumulation at pH 5.5. The strain also demonstrated probiotic attributes, including acid and bile tolerance and adhesion to Caco-2 intestinal epithelial cells, supporting its functional relevance in the intestinal environment. Under simplified in vitro gut-like conditions, the presence of physiological bile salts significantly promoted whole-cell-mediated bioconversion of sucrose into inulins, yielding approximately 6.2 g/L after 24 h. These findings highlight L. plantarum HK9 as a promising synbiotic candidate capable of supporting inulin production under selected gut-like conditions.
Probiotics are live microorganisms that provide health benefits by modulating the gut microbiota through their bioactive metabolites, known as postbiotics. In this study, Magnusiomyces capitatus OY151 was isolated and evaluated for its in vitro probiotic potential. The yeast strain was assessed for tolerance to tempera...

Limosilactobacillus fermentum is a promising probiotic species with reported benefits for gastrointestinal health and host metabolism. In this study, a novel L. fermentum strain, DX2034, isolated from the feces of a healthy Korean infant, was characterized through phenotypic and genomic analyses, and its anti-adipogeni...

This study investigated the probiotic potential, safety profile, and functions of lactic acid bacteria (LAB) derived from traditionally fermented raw makgeolli brewed in Suncheon, Korea, in 2024. In total, 70 LAB strains were isolated and identified as Lactiplantibacillus plantarum, Leuconostoc mesenteroides, Levilacto...

This study clarifies the primary microbial source of 2-PE in sour fish fermentation and verifies its specific regulatory effect on LAB, though it is not the core effector molecule through which Saccharomyces cerevisiae modulates LAB metabolism.
