Effect of Drying Temperature on the Drying Kinetics of Red Rice Paddy (Oryza sativa L.) in a Tray Dryer

Abstract

Understanding the temperature-dependent drying kinetics and convective transport mechanism is critical for the characterization of the drying process of red rice paddy under controlled conditions. This present study evaluates the drying behavior and heat and mass transfer characteristics of red rice paddy in a laboratory-scale tray dryer over a temperature range of 30 – 80 °C, with sun drying functioning as a reference. The drying kinetics were evaluated using several thin-layer models, while convective heat and mass transfer characteristics were estimated from dimensionless-number correlations. Increasing the drying temperature enhanced moisture removal, with the average drying rate increasing from 0.0012 kg moisture/(kg dry paddy·min) during sun drying to 0.0020 kg moisture/(kg dry paddy·min) at 80 °C tray drying. Among the evaluated models, the Page model demonstrated the optimal overall fit, with an average coefficient of determination of 0.9904 and a sum of squared errors of 0.0050. The estimated convective heat transfer coefficient remained nearly constant at 68.43 ± 0.40 W/(m2·K). Conversely, the convective mass transfer coefficient exhibited an increase, rising from 0.0649 to 0.0799 m/s across the temperature range of 30 to 80 °C. The activation energy for convective mass transfer was found to be 3.70 kJ/mol. The results obtained characterize the temperature-dependent drying and convective transport behavior within the investigated drying configuration and observation period.

Assessment of the effects of drying temperatures on effective moisture diffusion and quality properties of purple carrot slices dried by hot air method

This study examined the influence of hot-air drying temperature on the moisture ratio (MR), drying rate (DR), effective moisture diffusivity (Deff), color characteristics (L, a, b, C, and ΔE), and hardness (N) of purple carrot slices. A clear temperature-dependent response was observed for both the drying behavior and...

Comparative study on drying kinetics and thermodynamic characteristics of Indica rice under microwave and hot-air drying

To overcome mass-transfer bottlenecks, such as case hardening, in traditional grain dehydration, this study systematically investigated the drying kinetics and thermodynamic mechanisms of Indica rice subjected to hot-air drying (HAD) and microwave drying (MD). Dehydration experiments were conducted across various opera...

Comparative Evaluation of Drying Kinetics, Energy Performance, Quality Attributes and Mathematical Modeling of Nile Tilapia in Natural and Forced Convection Greenhouse Solar Dryer System

This study investigates the drying kinetics and performance of a Parabolic Greenhouse Solar Dryer (PGSD) for Nile Tilapia during the winter season in Thailand (December–January). Two operation modes were tested: passive (natural convection) and active (forced convection) at air velocities of 1–3 m/s. Results showed tha...

Drying Kinetics and Convective Heat Transfer of Coconut-Shell Biobriquettes in a Dual-Blower Tray Dryer

Biobriquette quality is strongly determined by the drying process, yet the relationship between drying conditions, product quality, and the underlying convective heat transfer mechanism is rarely quantified together. This study evaluates the drying kinetics, product quality, and convective heat transfer characteristics...

Drying Kinetics, Apparent Moisture Diffusivity, and Energy Performance of Black Soldier Fly Larvae in a Rotating-Tray Hot-Air Dryer

Fresh black soldier fly larvae (BSFL) have a high moisture content that complicates storage and requires energy-intensive postharvest drying. This study evaluated the effects of drying-air temperature and tray rotation speed on BSFL drying kinetics, energy performance, and moisture transport in a rotating-tray hot-air...
