Emerging Metal–Organic Frameworks (MOFs): Synthesis, Bioactivities, Preservation, Active Packaging/Sensing System, and Future Perspectives for Seafood Applications

ABSTRACT Seafood is highly susceptible to rapid microbial proliferation, lipid oxidation, and volatile spoilage compound accumulation, resulting in rapid quality deterioration and food waste. Metal‐organic frameworks (MOFs), a class of crystalline coordination materials with tunable porosity, high surface area, and div...

Effects of Konjac Glucomannan and Inulin on the Gel Properties, Swallowing Characteristics, and In Vitro Digestion of Heat-Induced Silver Carp–Sea Cucumber Composite Gels for Dysphagia

In this study, we used silver carp (Hypophthalmichthys molitrix) and sea cucumber (Apostichopus japonicus) as the primary protein sources and supplemented them with konjac glucomannan (KGM) or inulin (INU) at concentrations of 0%, 0.5%, 1.0%, and 1.5% to evaluate the gelling properties, textural characteristics, rheolo...

Crustacean Processing By-Products as Sustainable Sources of Bioactive Compounds: A Comprehensive Review of Conventional and Emerging Extraction Technologies and Applications

Crustacean processing industries, particularly those that process shrimp, crab, and lobster, generate substantial quantities of biological waste, consisting primarily of shells, heads, and exoskeletons. These by-products contribute significantly to environmental pollution due to their high organic load, slow degradabil...

Low-Molecular-Weight Salmon Collagen Peptides Promote Extracellular Matrix Gene (ECM) Expression in BJ Fibroblasts

Overall, this study demonstrates that salmon skin LMWCPs were cytocompatible within the tested concentration range and modulated several ECM-related genes, providing a preliminary basis for future protein-level, functional, and translational evaluation.

Integrated LC-MS/MS and molecular dynamics approach reveals calcium-binding behavior of collagen-derived peptides from silver sillago bone.

The results suggest that collagen-derived peptides in silver sillago bone may contribute to calcium retention and transport in this in vitro model, but their specific roles in cellular uptake and relevance in vivo remain to be established.
