Abstract

According to independent experts, total food losses in Russia amount to about 41 %, which is estimated at 17 million tons per year. Most of the food products, about 20 %, are lost at the stages of production, processing and transportation. Other 9 % are lost in storage facilities, stores and restaurants. The regulatory and specifications documentation states that the shelf life of a product is determined by the product manufacturer. The determining factor of the final product shelf life is the quality of the primary product. Often, a newly produced grain product does not pass incoming inspection, as it was produced from low-quality grain that had deteriorated due to storage conditions violation or as a result of long-term storage. The fat acidity value (FAV) characterizes the freshness of grain and grain products and is used to assess their quality. The article presents the shelf-life norms by FAV for wheat grain, wheat flour and semolina, established as a result of research conducted. The values are 50, 80 and 110 mg KOH/ 1 g of fat, respectively. Using the developed organoleptic properties assessment methodology for semolina and porridge cooked from it, as well as the established freshness and shelf-life norms for semolina, the shelf life of the product for various storage conditions was established. The formula with a high determination coefficient for determining the calculated values of the flour ripening time has been derived. The strong correlation between the fat acidity value of food wheat grain and the ones of the flour produced from this grain before and after its ripening has been confirmed. On the basis of statistical processing and regression analysis of the experimental data on the storage of wheat and grain products made from it, a mathematical model for forecasting the safe storage term and shelf life of wheat flour and semolina before their production by the initial fat acidity value of the primary product was developed.
