Экструзия как технология формирования пищевых матриц для доставки биологически активных веществ

Abstract

В статье обобщены литературные данные о применении термопластической экструзии для формирования пищевых матриц, предназначенных для включения, стабилизации и направленного высвобождения биологически активных веществ (БАВ). Показано, что экструзия может рассматриваться не только как способ получения снеков, хлебцев и других продуктов, готовых к употреблению, но и как инструмент управления структурным состоянием носителя. Рассмотрены основные типы экструзионных матриц: пористые зерновые экструдаты, плотные крахмальные, мальтодекстриновые стекловидные, белково-углеводные и с предварительно защищенными формами БАВ. Отмечено, что состав сырья и термомеханические режимы экструзии, включая влагосодержание смеси, температуру, сдвиговое воздействие и удельную механическую энергию, определяют свойства формируемых матриц и степень преобразования биополимеров. Показано, что при получении пористых экструдатов используют влагосодержание 12–20 % и температуру в предматричной зоне 120…160 °C. При этом повышение влажности снижает температуры фазовых переходов крахмальной фазы: для кукурузного крахмала температура плавления уменьшается примерно со 150 °C при влажности 20 % и приближается к 70 °C при 60 %. Рассмотрено влияние структуры экструдатов на удержание и высвобождение БАВ. Пористые матрицы целесообразны для прямого обогащения готовых продуктов, однако их быстрое смачивание может ускорять выход активных веществ, усиливать специфические органолептические проявления. Плотные и стекловидные системы, напротив, способны ограничивать диффузию, снижать молекулярную подвижность, повышать стабильность включенных соединений и обеспечивать более медленное высвобождение. Показано, что регулирование состава и режимов экструзии позволяет изменять структуру матрицы от пористой расширенной к более плотной или стекловидной. Рассмотрена роль крахмала, мальтодекстринов, белков, пищевых волокон и низкомолекулярных компонентов в формировании пористости, плотности, растворимости и профиля высвобождения. Сделан вывод о перспективности экструзии для разработки функциональных продуктов с заданными свойствами структуры и прогнозируемым поведением активных компонентов при хранении и потреблении. This article summarizes literature data on the use of thermoplastic extrusion for the formation of food matrices intended for the incorporation, stabilization, and controlled release of bioactive compounds (BCs). It is shown that extrusion can be considered not only as a method for producing snacks, crispbreads, and other ready-to-eat products, but also as a tool for controlling the structural state of the carrier. The main types of extrusion matrices are considered: porous cereal extrudates, dense starch matrices, glassy maltodextrin systems, protein-carbohydrate matrices, and matrices containing pre-protected forms of BCs. It is noted that the composition of raw materials and thermomechanical extrusion conditions, including mixture moisture content, temperature, shear stress, and specific mechanical energy, determine the properties of the formed matrices and the degree of biopolymer transformation. When producing porous extrudates, moisture content of 12–20 % and temperature in the die zone of 120…160 °C are typically used. Increasing moisture content lowers the phase-transition temperatures of the starch phase: for corn starch, the melting temperature decreases from approximately 150 °C at 20 % moisture and approaches 70 °C at 60 % moisture. The effect of extrudate structure on the retention and release of BCs is considered. Porous matrices are suitable for the direct enrichment of finished products. However, their rapid wetting can accelerate the release of active compounds and intensify specific organoleptic attributes. Dense and glassy systems, in contrast, can restrict diffusion, reduce molecular mobility, improve the stability of incorporated compounds, and provide slower release. It is shown that regulation of composition and extrusion conditions makes it possible to shift the matrix structure from a porous expanded state to a denser or glassy state. The role of starch, maltodextrins, proteins, dietary fibers, and low-molecular-weight components in the formation of porosity, density, solubility, and release profile is discussed. The prospects of extrusion for developing functional foods with specified structural properties and predictable behavior of active compounds during storage and consumption are concluded.
