The findings suggest that SP is a multi-pathway natural antiglycation agent, but its efficacy in real food matrices requires further validation.

Abstract

Inhibiting advanced glycation end products (AGEs) in thermally processed foods is crucial for managing diabetic complications. This study evaluated the antiglycation activity and mechanisms of Spinosin (SP) from sour jujube seeds in three glycation systems, namely, β-lactoglobulin (β-Lg) with glucose, glyoxal, or glycolaldehyde, incubated at 37 °C in the dark. The results showed that 40-160 μM SP significantly inhibited AGEs formation, with inhibition rates at 160 μM reaching 98.83 ± 0.1%, 83.46 ± 2.1%, and 37.26 ± 0.1% for the glucose, glyoxal, and glycolaldehyde systems, respectively. In addition, SP also inhibited protein oxidation, cross-linking, and the formation of amyloid cross-β structures, potentially contributing to the preservation of β-Lg structure. Molecular docking suggested that SP may shield glycation-prone residues via steric hindrance. Fluorescence titration indicated hydrogen-bonding and van der Waals interactions with a temperature-decreased binding constant (exothermic). These findings suggest that SP is a multi-pathway natural antiglycation agent, but its efficacy in real food matrices requires further validation.

Hydrolysable tannin induced non-covalent binding with walnut (Juglans regia L.) globulin: insight from aggregation behavior and molecular interaction.

The current study focused on the transition mechanism underling hydrolyzable tannins (HT) induced the insoluble aggregation of walnut (Juglans regia L.) globulin isolate (WGI). First, pedunculagin and castalagin were employed to generate non-covalent complexes with prepared WGI. As the HT concentration increased in the...

Structural elucidation and structure-activity relationship of Porphyra haitanensis polysaccharide for preventing ulcerative colitis: Targeting the immune-microbiota-metabolism axis.

Polysaccharides from Porphyra haitanensis exhibited potential against ulcerative colitis (UC), whereas the mechanism remained unclear. In this study, Porphyra haitanensis polysaccharide (PP) was extracted by high-pressure-assisted hot water method. PP was characterized as a sulfated amorphous polysaccharide mainly cons...

Pineapple peel polyphenols mitigate fructose-induced bovine lactoferrin glycation and aggregation: insights into enhanced digestibility and bioactivity of digests.

This study addressed issues such as protein aggregation, reduced digestibility, decreased nutritional bioavailability, and the formation of harmful advanced glycation end products (AGEs) caused by fructose-induced glycation of bovine lactoferrin during thermal processing. We investigated the inhibitory effects of three...
